CRC Volunteer Spotlight: Paulette Rosarie Khoury

We asked Paulette Rosarie Khoury, one of our CRC Tea Co-chair volunteers, what she would say to someone thinking of attending the CRC Tea. Here is what she shared with us:

“Thirty years ago, when my family abruptly moved from the Philippines to Encinitas, my mom had five kids and no idea how to navigate life in America. She found help through volunteers and resources at CRC.

Growing up in Leucadia, I always knew about the CRC—but it wasn’t until I had kids of my own that I wanted to give back more intentionally. Every fall, we walk our neighborhood and collect food donations for the CRC pantry. I’ve also taught my kids to appreciate the value of gently-used items, whether it’s a hand-me-down from cousins or a treasure from the resale store. They’ve learned to care for their toys, knowing someone else might enjoy them next.

A few years ago I was riding my bike past CRC on 2nd Street and saw a window was broken. Something about that moment really awakened a deeper calling in me to do more. I reached out for volunteer opportunities and have been involved for almost five years now—helping with tabling at events and spreading the word about CRC’s resources.

I joined the CRC Tea Fundraiser Committee because it felt like a way to make a bigger financial impact. Last year, while picking up a gift certificate for the auction, someone asked me what CRC offered. She told me that her roommate was in an abusive relationship and she didn’t know how to help her. I gave her the hotline number and begged her to call and take her friend to the safe house. She left work to do it right away. I sat in my car afterward and cried. I felt so many emotions—grief for that girl, gratitude for CRC and a deeper conviction to stay involved.

This year I’m serving as the Co-Chair and Auction Coordinator for the Tea Event. As a business owner, I connect with local businesses and people to secure donations.

The generosity of our community always amazes me. Every “yes” feels so personal—like helping a family put groceries on the table, giving someone warm clothes or providing safety for someone in need. CRC is about food, clothing, shelter—the basic needs that change lives.

What people don’t always see is how many volunteers work behind the scenes to make the Tea a success—from parking and menu planning to designing invitations. It’s a true community effort. The event is a beautiful celebration where supporters come together, share stories and witness the impact of their contributions.

One of my favorite parts is seeing the generosity displayed in auction baskets donated by local businesses. It’s really uplifting to be surrounded by people driven to make our community stronger.

At the end of the day, I don’t have to tell my kids to be kind or to contribute. I can show them the power of giving and receiving and how small acts of kindness ripple into lasting change.
